Our Shoppe

The Cuba Cheese Shoppe is nestled in the farmlands of southewestern New York State where cheese has been a principal product since the late 1800's. Cuba, at that time, was the "cheese center of the world". The price for cheddar cheese was established at a meeting in Cuba each week and was accepted as the price in this nation and the world.

Congratulations to our Mac 'n Cheese Winners !

1st Place $100 Winner: Craig Howe

Craig's Recipe:

1 lb macaroni

1 lb bacon

6 TB flour

6 TB bacon grease

2 cups milk

3 cups Cuba Sharp Cheddar

2 cups 2 year Cuba reserve Cheddar

1 cup horseradish cheese

3 slices yellow American

1 TB prepared mustard

1/2 ts black pepper

1 cup BBQ pulled pork

1/2 cup bread crumbs

Cook pasta as directed on package. Cook bacon and reserve grease.

In a large mixing bowl add cooked pasta, chopped bacon, chopped pork, mustard, and pepper.

In a large saucepan on medium heat, make rue using bacon grease and flour, stir until smooth and heated through. Add milk stirring consistently until it starts to thicken then add all cheeses. Keep stirring until all melted and smooth.

Pour cheese sauce over pasta and mix, put all into baking dish and top with bread crumbs. Bake at 350 for 30 - 40 minutes. Let stand for 5 - 10, serve and enjoy !

2nd Place $50 Winner: Jordan Sweeten

Jordan's recipe:

1 lb cooked macaroni

4 TB butter

3 TB flour

4 cups milk

Salt and pepper to taste

Cook until thick then add-

  8 oz Extra Sharp Cuba Cheese grated

  16 oz Sharp Cuba Cheese grated

  3 oz Blue Cheese

  3 oz Smokey Cheddar Cheese

  8 oz cream cheese

  1 tsp dry mustard

place all in two 9 x 13 greased pans

top with bread crumbs and some grated Sharp Cheddar

bake at 350 for 30 minutes

3rd Place $25 Winner: Mark Hellwig

Mark's recipe:

1 lb Pasta of your choice

4 TB butter

1/2 cup flour

Salt (optional)

Pepper (optional)

2 1/2 cups whole milk

8 oz Sharp Cuba Cheddar Cheese

8 oz Buffalo Wing Cheddar

8 oz cream cheese

1 1/2 lb chicken breast (par-boiled)

1/4 cup hot sauce

1/2 cup blue cheese

Preheat oven to 350

In medium suace pan bring water to a boil and add chicken to the water until it is no longer pink in the center. Prepare noodle according to package directions. then set aside.

In another medium suace pan at medium heat, melt butter then add flour, by whisking the butter and flour. The consistency will be like paste. Add salt and pepper to taste along with the milk making a creamy sauce. After shredding the cheese add to the creamy sauce including the cream cheese and blue cheese.

After chicken is cool to the touch shred into pieces. Add chicken to the hot sauce so that the chicken can soak up the flavors then add to the cheese sauce. Bring cheese sauce to a boil and pour over the top of the cooked pasta and fold ingredients.

Put into a casserole dish with some chicken on top for looks and bake for 15 - 20 minutes at 350 to heat the dish thoroughly.

CHEESE OF THE MONTH RECIPE 


 

Fettuccine with Mushroom & Garlic Sauce, Chicken, Spinach & Fontinella Cheese
 
Ingredients:
1 lb. Boneless Chicken Thighs cut into 1” cubes
16 oz. Fettuccine
12 oz. Jar Mushroom & Garlic Sauce
1/3 cup Extra Virgin Olive Oil
½ cup Onion, chopped
Salt & Pepper to Taste
1 Package (6 oz.) Baby Spinach, chopped
1 cup (8 oz.) Fontinella Cheese, cut into ½” cubes
 
Bring a large pot of water to a boil.
Heat olive oil in a large skillet over medium heat. Add onions, cook until golden.
Add chicken to skillet; season with salt and pepper and cook 8-10 minutes until cooked through
Add Mushroom & Garlic Sauce & Baby Spinach to skillet and simmer for 5 minutes
Cook Pasta according to package directions. Drain. Immediately add sauce.
Transfer to a serving platter or bowl and serve.
